Red tea or Rooibos, Aspalathus linearis, is a shrub belonging to the Leguminosae family. It is a leguminous shrub with needle-like leaves native to the mountain slopes of the Western Cape Province,  where it has been used for centuries, but its use is rapidly spreading to Europe and Asia as well.

Rooibos is commonly prepared in the same manner as black tea, usually without or with, a little milk, and/sugar or honey. Other methods include a slice of lemon and using honey instead of sugar to sweeten it. It is also served as espresso, lattes, cappuccinos or iced tea.

As a fresh leaf, rooibos contains a high content of ascorbic acid (vit C), which is lost when made into tea.

Rooibos does not contain caffeine and has low tannin levels compared to black tea or green tea. Rooibos contains polyphenols, including flavanols, flavones, flavanones, dihydrochalcones, aspalathin and nothofagin.

The processed leaves and stems contain benzoic and cinnamic acids.
